Our Recipes: Sweet Potato Casserole

The holidays are upon us, and for many, that means lots of food. Here are some of the features staff’s favorite recipes for the season.

Sweet potato casserole

What you need (for eight servings)

4 sweet potatoes

1/2-cup of brown sugar

1/3-cup of milk

3 eggs lightly beaten

1/4-cup of butter

1-teaspoon of vanilla

1/4-teaspoon of salt

1-teaspoon of cinnamon

1-teaspoon of nutmeg

Directions:

1. Peel and cube potatoes, then boil them for 10 minutes

2. With a mixer, cream and beat the potatoes until they are smooth.

3. As you beat the potatoes, add the other ingredients until everything is blended.

4. Once everything is mixed, pour the mixture into a casserole dish and bake 50 minutes on 350 until the dish is puffy.

5. Once the dish is cooked, add marshmallows and melt them over the dish in the oven for 3-5 minutes.
