Dancing Beta is a sushi restaurant that owner Paul Geldof hopes to have open by mid-September.

The sushi shop menu will feature a sushi bar and serve noodle and rice dishes, miso soup, edamame and tempura dishes, and will feature several vegetarian options.

Sushi rolls come in six to eight pieces. Pieces can be ordered a la carte as well.

Ron Burbick, financier and founder of the Phoenix Project, said the opening was pushed back because the arrival of some kitchen equipment was delayed.

“It will be there,” Burbick said. “It’s just a matter of when the hood for the grill comes in.”

Geldof is not only the owner, but he is also a trained sushi chef, and will be running the kitchen as well as the restaurant.

Geldof said he expects the restaurant to be open Tuesday through Saturday from 11 a.m. to 10 p.m., and said he anticipates those hours to go later as the semester progresses.

“We will probably be extending hours at the end of the semester,” Geldof said. “Students will be studying for finals, so we’ll probably be open till midnight.”

Dancing Beta will also have a beer and wine license and will serve traditional Asian drinks like sake and plum wine.
