Vegan dishes you can cook in your dorm room (with some difficulty)

Being a vegan just got easier. The following recipes can be made in most dorm kitchens.
Spinach Mushroom Sandwich

1 box frozen spinach
1 cup mushrooms, sliced finely
1 pint vegan sour cream
slices of bread or English muffins
Cook spinach and drain. Placed cooked spinach and mushrooms on bread. Cover with sour cream. Place in toaster oven or microwave under low heat until warm.
Vegan Strawberry and Spinach Salad

4 large strawberries
4 fl oz vegetable oil
1 fl oz white wine vinegar
1 tablespoon each fresh chopped basil and chive
1 teaspoon rice syrup or honey substitute
1/4 teaspoon fresh mustard
Blend together the above ingredients and drizzle over fresh spinach, sliced strawberries and lettuce. Sprinkle with pine nuts.
Vegan Brownies

2 cups unbleached all-purpose flour
2 cups white sugar
3/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon salt
1 cup water
1 cup vegetable oil
1 teaspoon vanilla extract
Preheat the oven to 350 degrees. Stir together the flour, sugar, cocoa powder, baking powder and salt in a large bowl. Add water, vegetable oil and vanilla. Pour into a pan and spread evenly. Bake for 25 to 30 minutes until the top is no longer shiny.
Blueberry vegan pancakes

1 cup white all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons sugar
1 teaspoon vanilla
1 egg replacer
1 cup soymilk
2 tablespoons vegetable oil
Blueberries or other fruit (optional)
Mix wet ingredients and fruit in a medium sized bowl. Mix dry ingredients in a larger bowl.
Combine wet and dry ingredients and mix until smooth.
Drop onto heated pan. Flip over when each pancake begins to bubble on top.
